Brasserie Vinatier, Bordeaux
Brasserie Vinatier is Nouvelle Garde’s bold new brasserie in the heart of Bordeaux, designed by B3 Designers. This brasserie is the group’s ninth, after Paris, Lille, Marseilles, and Lyon.
The Concept
This concept explores a fictional chateau and the family within, illustrating their evolution over time. At its heart, an open fire kitchen draws diners into the action, surrounded by decor that hints at a storied past. Positioned near a busy shopping center, the restaurant’s Basque-inspired colour palette blends tradition and warmth, creating a distinct, timeless retreat from the world outside.
Stepping Into the Restaurant
Inspired by château vineyards, the facade and outdoor terrace are surrounded by lush plantings. Striped awnings line the facade, while elegant Art Nouveau details frame the windows.
Inside, rich timbers, brass accents, and upholstery in Bordeaux tones evoke the region’s wine-estate elegance, while the Murano-glass chandelier shaped like a cluster of grapes offers a subtle homage to the city’s viticultural heritage.
The Spaces
The Grand Saloon retains the traditional elements of a saloon – such as a deep, rich colour scheme, striking lighting, and decorative artwork, and gives them modern twists.
With a warm, rich colour palette, the Dining Room captures the cosy atmosphere of a chateau dining room. It seats 140 guests, with a welcoming flow from marble bar to kitchen to tables. Modern touches in the joinery and lighting convey the evolution of the space through the generations.
The Open Kitchen - A Nouvelle Garde Signature
The open kitchen in the restaurant draws inspiration from a French chateau kitchen, featuring an open fire and a striking gantry, effectively blurring the boundary between the back of house and the guests to create a warm and convivial atmosphere throughout the restaurant.
Wine Displays and Bar Design
Wine is a key part of the design story. The restaurant features wine displays across the space, incorporating materiality such as warm oak and lighting, inspired by French chateau wine cellars.
The bar showcases tiered shelving filled with artisanal spirits and vintage wines, softly illuminated by ambient lighting, table lamps, and a chandelier. The colour palette is warm, complemented by comfortable bar stools and brass details.
